Ingredients

  • 4 cups mixed winter greens (kale, spinach, and arugula)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup shredded carrots
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1 avocado, diced
  • 1/2 cup snowflake tortilla chips
  • For the salsa:
      
    • 2 medium tomatoes, diced
    • 1/4 cup red onion, finely chopped
    • 1 small jalapeño, seeded and minced
    • 1/4 cup fresh cilantro, chopped
    • Juice of 1 lime
    • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. To prepare the salsa, combine diced tomatoes, red onion, jalapeño, cilantro, lime juice, salt, and pepper in a bowl. Mix well and set aside to let flavors meld.
  2. In a large salad bowl, toss the winter greens, cherry tomatoes, shredded carrots, red bell pepper, and red onion.
  3. Drizzle olive oil and apple cider vinegar over the salad, then season with salt and pepper. Toss to coat evenly.
  4. Add the diced avocado and gently fold it into the salad to avoid mashing.
  5. Just before serving, sprinkle the snowflake tortilla chips over the top for crunch.
  6. Serve the salad alongside or topped with the fresh homemade salsa for a burst of flavor.

Notes

For extra protein, add grilled chicken or black beans. To enhance the crunch, serve the tortilla chips separately so they remain crisp.
