White Bean Kale Soup

A hearty and nutritious white bean kale soup that’s perfect for a cozy meal, combining tender kale with creamy white beans in a flavorful broth.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 (15 oz) cans white beans, drained and rinsed
  • 1 bunch kale, stems removed and chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and freshly ground black pepper, to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • Juice of 1/2 lemon

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and cook for 1 minute until fragrant.
  3. Pour in vegetable broth and bring to a gentle boil.
  4. Add white beans, thyme, rosemary, salt, pepper, and red pepper flakes if using. Reduce heat and simmer for 10 minutes.
  5. Stir in chopped kale and cook until wilted, about 5 minutes.
  6. Remove from heat and stir in lemon juice for brightness.
  7. Adjust seasoning if needed and serve warm.

Notes

For added richness, top with grated Parmesan or a drizzle of extra-virgin olive oil. Serve with crusty bread for a complete meal.
