Vegetarian Crunchy Roll Bowls

These Vegetarian Crunchy Roll Bowls combine fresh veggies, crispy tempura, and a flavorful sauce for a satisfying and healthy meal perfect for lunch or dinner.

Ingredients

  • 1 cup sushi rice, cooked
  • 1/2 cup shredded carrots
  • 1/2 cup cucumber, julienned
  • 1/2 avocado, sliced
  • 1/4 cup edamame, shelled and cooked
  • 1/2 cup tempura-battered and fried vegetables (e.g., sweet potato, zucchini)
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp spicy mayo (optional)
  • 1 tbsp toasted sesame seeds
  • 2 green onions, chopped
  • Pickled ginger, for garnish
  • Nori strips, for garnish

Instructions

  1. Cook sushi rice according to package instructions and allow to cool slightly.
  2. Prepare the tempura vegetables by dipping sliced veggies into tempura batter and frying until golden and crispy. Drain on paper towels.
  3. In a small bowl, whisk together soy sauce, rice vinegar, and sesame oil to make the dressing.
  4. Assemble the bowls by dividing the cooked rice into serving bowls.
  5. Arrange shredded carrots, cucumber, avocado slices, edamame, and tempura vegetables on top of the rice.
  6. Drizzle the dressing evenly over each bowl and add a dollop of spicy mayo if desired.
  7. Sprinkle toasted sesame seeds and chopped green onions over the bowls.
  8. Garnish with pickled ginger and nori strips before serving.

Notes

For extra crunch, sprinkle crushed toasted seaweed snacks or add crispy fried onions on top before serving.
