Valentines Dinner

A romantic and elegant Valentnes Dinner featuring flavorful herb-crusted steak with garlic roasted potatoes and a fresh mixed greens salad, perfect for a special evening.

Ingredients

  • 2 ribeye steaks (8 oz each)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp fresh rosemary, chopped
  • 1 tsp fresh thyme, chopped
  • Salt and freshly ground black pepper, to taste
  • 4 medium red potatoes, cut into wedges
  • 1 tbsp butter
  • 4 cups mixed salad greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup sliced red onions
  • 2 tbsp balsamic vinaigrette dressing

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss potato wedges with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden and tender.
  3. While potatoes roast, prepare the steak crust by mixing garlic, rosemary, thyme, salt, and pepper.
  4. Rub steaks with remaining olive oil and herb mixture on both sides.
  5. Heat a skillet over medium-high heat. Sear steaks for 3-4 minutes per side for medium-rare, or cook to desired doneness.
  6. Remove steaks from skillet and let rest for 5 minutes.
  7. In a large bowl, combine salad greens, cherry tomatoes, and red onions. Toss with balsamic vinaigrette.
  8. Serve steaks with roasted potatoes and salad on the side. Add a pat of butter on potatoes if desired.

Notes

For an indulgent touch, serve with a glass of red wine and sprinkle freshly grated Parmesan over the salad.
