Turmeric Ginger Chicken Noodle Soup

A warming and healing chicken noodle soup infused with turmeric and ginger, perfect for boosting immunity and comfort on chilly days.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon ground turmeric
  • 6 cups chicken broth
  • 2 cups cooked shredded chicken
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 cup egg noodles
  • Salt and pepper, to taste
  • 2 tablespoons fresh parsley, chopped
  • Juice of 1/2 lemon

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until translucent, about 5 minutes.
  2. Add garlic, ginger, and turmeric; sauté for 1–2 minutes until fragrant.
  3. Pour in chicken broth and bring to a boil.
  4. Add carrots and celery, reduce heat and simmer for 10 minutes until vegetables are tender.
  5. Stir in shredded chicken and egg noodles. Cook for another 7–8 minutes until noodles are tender.
  6. Season with salt and pepper to taste.
  7. Remove from heat, stir in lemon juice and fresh parsley before serving.

Notes

For extra flavor, garnish with a spoonful of plain yogurt or a dash of chili flakes for some heat.
