Turmeric Chicken Soup

A warming and nourishing turmeric chicken soup infused with aromatic spices, perfect for boosting immunity and comforting the soul.

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 6 cups chicken broth
  • 2 cups cooked shredded chicken breast
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 cup coconut milk
  • Salt and freshly ground black pepper, to taste
  • Fresh cilantro or parsley, for garnish
  • Juice of 1 lime

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and grated ginger; cook for 1-2 minutes until fragrant.
  3. Stir in turmeric, cumin, and coriander; cook for an additional 1 minute to toast the spices.
  4. Pour in chicken broth and bring to a boil.
  5. Add sliced carrots and celery. Reduce heat and simmer for 10-12 minutes until vegetables are tender.
  6. Stir in shredded chicken and coconut milk; heat through for 5 minutes.
  7. Season with salt, pepper, and lime juice to taste.
  8. Serve hot, garnished with fresh cilantro or parsley.

Notes

For extra flavor, add a pinch of freshly ground black pepper to enhance turmeric’s benefits, and serve with crusty bread or steamed rice.
