  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 2 1/4 cups chicken broth
  • 2/3 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon garlic powder
  • 2 cups biscuit baking mix (such as Bisquick)
  • 2/3 cup milk (for biscuit topping)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes until bubbly and golden.
  3. Gradually whisk in chicken broth and milk, cooking until mixture thickens and bubbles.
  4. Season with salt, pepper, thyme, and garlic powder.
  5. Add cooked turkey, peas and carrots, and corn; stir to combine and remove from heat.
  6. Pour the turkey and vegetable filling into a 9-inch pie dish or casserole.
  7. In a bowl, combine biscuit mix and 2/3 cup milk to form biscuit dough.
  8. Drop biscuit dough by spoonfuls evenly over the turkey filling.
  9. Bake uncovered for 20-25 minutes until biscuit topping is golden brown and filling is bubbly.
  10. Let stand for 5 minutes before serving.

Notes

For extra flavor, add a splash of white wine to the filling or serve with a side of steamed green beans.
