Turkey Cranberry Quesadillas

Delight in these Turkey Cranberry Quesadillas, a perfect blend of savory turkey, melted cheese, and sweet cranberry sauce wrapped in a crispy tortilla. Ideal for a quick and flavorful meal any time of day.

  • 4 large flour tortillas
  • 2 cups cooked turkey, shredded or diced
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup cranberry sauce
  • 2 tablespoons butter
  • Optional: chopped green onions for garnish

Instructions

  1. Heat a large skillet over medium heat.
  2. Butter one side of a tortilla and place it butter-side-down on the skillet.
  3. Sprinkle a mix of mozzarella and cheddar cheese evenly over the tortilla.
  4. Layer the cooked turkey over the cheese, then dollop cranberry sauce on top.
  5. Place another sprinkle of cheese over the cranberry to help the quesadilla stick together.
  6. Top with another tortilla, butter the top side, and press gently.
  7. Cook until the bottom tortilla is golden brown and the cheese begins to melt, about 3–4 minutes.
  8. Carefully flip the quesadilla and cook the other side until golden brown and cheese is fully melted, another 3–4 minutes.
  9. Remove from skillet, let cool for a minute, then slice into wedges.
  10. Garnish with chopped green onions if desired and serve warm.

Notes

For an extra kick, add a sprinkle of crushed red pepper flakes inside before cooking or serve with a side of sour cream.
