Tomato Basil Noodle Soup

A comforting and flavorful tomato basil noodle soup, perfect for a light yet satisfying meal with fresh herbs and tender noodles.

Ingredients

  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1 cup egg noodles
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1/2 cup fresh basil leaves, chopped
  • Salt and pepper to taste
  • Optional: grated Parmesan cheese for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic and sauté until translucent, about 3-4 minutes.
  2. Add the diced tomatoes and vegetable broth, bring to a boil.
  3. Add the egg noodles and cook according to package instructions, usually 6-8 minutes, until tender.
  4. Stir in chopped fresh basil, then season with salt and pepper to taste.
  5. Remove from heat and ladle into bowls. Garnish with grated Parmesan if desired, and serve hot.

Notes

For a richer flavor, add a splash of heavy cream or a pinch of red pepper flakes for some heat.
