Tomato Basil Baked Chicken is a flavorful and healthy dish combining tender chicken breasts baked with fresh tomatoes and fragrant basil, perfect for a wholesome weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 2 cups cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place chicken breasts in a baking dish and drizzle with olive oil.
  3. In a bowl, combine cherry tomatoes, garlic, basil, oregano, salt, and pepper.
  4. Pour the tomato mixture evenly over the chicken breasts.
  5. Bake uncovered for 25-30 minutes until chicken is cooked through and juices run clear.
  6. Optionally, sprinkle Parmesan cheese over the chicken during the last 5 minutes of baking.
  7. Remove from oven and let rest for 5 minutes before serving.

Notes

For extra flavor, serve with a side of garlic sautéed spinach or over cooked quinoa. Leftovers can be stored in the fridge for up to 3 days.
