  • 1 small head green cabbage, shredded
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 jalapeño, seeded and minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup canned black beans, drained and rinsed
  • 1 cup diced tomatoes (canned or fresh)
  • 1/2 cup corn kernels (fresh or frozen)
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until translucent, about 3-4 minutes.
  2. Add minced garlic, bell pepper, and jalapeño to the skillet. Sauté for another 2-3 minutes until softened.
  3. Stir in ground cumin, chili powder, smoked paprika, salt, and black pepper, cooking until fragrant, about 1 minute.
  4. Add shredded cabbage to the skillet, stirring well to combine and cook for 5-7 minutes or until the cabbage is tender but still slightly crisp.
  5. Mix in black beans, diced tomatoes, and corn. Cook for an additional 3-4 minutes until heated through.
  6. Sprinkle shredded cheddar cheese over the skillet, cover, and let it melt for 2 minutes.
  7. Remove from heat, squeeze fresh lime juice over the dish, and garnish with chopped cilantro.
  8. Serve warm as a standalone meal or with tortillas for a complete Tex Mex experience.

Notes

For extra protein, add cooked ground beef or grilled chicken. Serve with avocado slices or a dollop of sour cream to enhance the flavors.
