Ingredients

Scale
  • 1 cup mashed sweet potato, cooked
  • 1/2 cup warm milk (105-115°F)
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon salt
  • 3 1/2 – 4 cups all-purpose flour, plus more for dusting

Instructions

  1. In a large bowl, combine warm milk and yeast. Let stand for 5 minutes until foamy.
  2. Add the mashed sweet potato, sugar, melted butter, egg, and salt to the yeast mixture. Mix well.
  3. Gradually add the flour, 1 cup at a time, mixing until a soft dough forms. The dough should be slightly sticky.
  4. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, until smooth and elastic.
  5. Place the dough in a greased bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  6. Punch down the dough and turn it out onto a lightly floured surface. Divide the dough into 12 equal pieces.
  7. Roll each piece into a smooth ball and place them in a greased 9×13 inch baking dish.
  8. Cover with plastic wrap and let rise for 30-45 minutes, or until nearly doubled in size.
  9. Preheat oven to 375°F (190°C).
  10. Bake for 20-25 minutes, or until golden brown.
  11. Let cool slightly before serving.

Notes

Brush the tops of the rolls with melted butter after baking for extra shine and flavor. Serve warm with butter or your favorite spread.
