  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/3 cup sweet chili sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 1 cup cooked jasmine rice
  • 1/2 cup shredded carrots
  • 1/2 cup sliced bell peppers
  • 1/4 cup chopped green onions
  • 1 tablespoon chopped fresh cilantro (optional)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Add minced garlic and sauté until fragrant, about 30 seconds.
  2. Add chicken pieces to the skillet, season with salt and pepper, and cook until browned and cooked through, about 6-8 minutes.
  3. In a small bowl, mix sweet chili sauce and soy sauce.
  4. Pour the sauce mixture over the cooked chicken and stir to coat evenly. Cook for another 2-3 minutes to let the flavors meld.
  5. Prepare bowls by dividing cooked jasmine rice among servings.
  6. Top rice with the sweet chili chicken, shredded carrots, sliced bell peppers, and green onions.
  7. Garnish with chopped cilantro if desired and serve immediately.

For extra texture and flavor, try adding toasted sesame seeds or a squeeze of lime juice before serving.
