Homemade Stuffed Pepper Soup

A hearty and comforting soup that captures the flavors of classic stuffed peppers in a warm, delicious bowl. Perfect for a satisfying weeknight dinner.

  • 1 lb ground beef
  • 1 cup chopped onion
  • 1 cup chopped green bell pepper
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • 1 (8 oz) can tomato sauce
  • 4 cups beef broth
  • 1 cup cooked rice
  • 1 tsp Worcestershire sauce
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • Shredded cheddar cheese for garnish (optional)

Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add chopped onion, green bell pepper, and garlic to the pot. Cook until vegetables are tender, about 5 minutes.
  3. Stir in diced tomatoes, tomato sauce, and beef broth.
  4. Add cooked rice, Worcestershire sauce, basil, oregano, salt, and pepper. Stir well to combine.
  5. Bring the soup to a boil, then reduce heat and simmer for 20 minutes to blend flavors.
  6. Adjust seasoning as needed before serving.
  7. Ladle into bowls and garnish with shredded cheddar cheese if desired.

Notes

For a lower-carb option, substitute cauliflower rice for the cooked rice or serve with a side of crusty bread to soak up the flavorful broth.
