Spicy miso ramen is a comforting Japanese noodle soup featuring a rich, flavorful miso broth with a spicy kick, topped with tender noodles and fresh vegetables.

  • 4 cups chicken or vegetable broth
  • 2 tablespoons red miso paste
  • 1 tablespoon chili paste (such as sriracha)
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 servings fresh ramen noodles
  • 1 cup sliced shiitake mushrooms
  • 1/2 cup corn kernels
  • 2 green onions, sliced
  • 1 soft-boiled egg, halved
  • 1 teaspoon sesame oil
  • 1 tablespoon soy sauce
  • 1 teaspoon toasted sesame seeds

Instructions

  1. In a large pot, heat sesame oil over medium heat and sauté garlic and ginger until fragrant, about 1 minute.
  2. Add chicken or vegetable broth and bring to a simmer.
  3. Whisk in red miso paste, soy sauce, and chili paste until well combined.
  4. Add sliced shiitake mushrooms and simmer for 5 minutes.
  5. Cook ramen noodles according to package instructions, drain, and set aside.
  6. Divide noodles into bowls and ladle hot miso broth with mushrooms over noodles.
  7. Top each bowl with corn, green onions, soft-boiled egg halves, and sprinkle with toasted sesame seeds.
  8. Serve immediately and enjoy the spicy warmth.

Notes

For extra heat, add a dash of chili oil or fresh sliced chili peppers before serving.
