Slow Cooker Italian Beef Sandwiches

Tender slow-cooked Italian beef served on crusty rolls, infused with flavorful spices and juicy peppers for a comforting and delicious sandwich perfect for any meal.

  • 3 to 4 pounds beef chuck roast
  • 1 packet Italian seasoning mix
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup beef broth
  • 1 cup pepperoncini peppers with juice
  • 4 cloves garlic, minced
  • 1 teaspoon crushed red pepper flakes (optional)
  • 6 Italian sandwich rolls
  • Provolone cheese slices (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Place the beef roast in the slow cooker.
  2. Sprinkle Italian seasoning, salt, and black pepper evenly over the beef.
  3. Add minced garlic, pepperoncini peppers along with their juice, and beef broth to the slow cooker.
  4. Cover and cook on low for 8 hours or on high for 4-5 hours, until the beef is tender and easily shredded.
  5. Remove the beef and shred it using two forks, then return to the slow cooker and mix with the juices.
  6. Split the Italian rolls and pile on the shredded beef, topping with provolone cheese if desired.
  7. Optionally, toast the sandwiches under the broiler until the cheese melts.
  8. Garnish with fresh parsley and serve hot with a side of pickles or peppers.

Notes

For extra flavor, serve with giardiniera or add sautéed bell peppers and onions. Leftover beef makes great tacos or pasta topping.
