Tender beef cooked low and slow in a rich garlic butter sauce, delivering a flavorful, melt-in-your-mouth meal perfect for any dinner occasion.

  • 2 lbs beef chuck roast, cut into chunks
  • 4 tbsp unsalted butter
  • 6 cloves garlic, minced
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and black pepper, to taste
  • 1 tbsp olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season beef chunks with salt and pepper, then sear each side until browned.
  2. Add the butter and minced garlic to the skillet, cooking until fragrant and butter is melted.
  3. Transfer the beef and garlic butter mixture to the slow cooker.
  4. Pour in beef broth and Worcestershire sauce, then sprinkle thyme and rosemary over the top.
  5. Cover and cook on low for 7-8 hours or until beef is tender and easily shredded.
  6. Before serving, taste and adjust seasoning if needed.
  7. Garnish with fresh parsley and serve hot with your choice of sides.

Notes

For an extra touch of flavor, add sliced mushrooms or caramelized onions to the slow cooker before cooking.
