This hearty slow cooker chili combines tender ground beef, beans, and spices simmered to perfection for a comforting and flavorful meal perfect for any day.

  • 1 lb ground beef
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (optional)
  • 1 cup beef broth
  • Salt and black pepper to taste
  • 1 tbsp olive oil

Instructions

  1. In a skillet, heat olive oil over medium heat. Add chopped onion, garlic, and bell pepper; cook until softened, about 5 minutes.
  2. Add ground beef and cook until browned, breaking it apart with a spoon; drain excess fat.
  3. Transfer the beef mixture to the slow cooker.
  4. Add kidney beans, black beans, diced tomatoes, beef broth, chili powder, cumin, paprika, cayenne pepper, salt, and black pepper.
  5. Stir to combine all ingredients well.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  7. Before serving, taste and adjust seasoning if necessary. Serve hot.

Notes

For extra richness, top your chili with shredded cheese, sour cream, or chopped green onions. Serve with warm cornbread or tortilla chips for a complete meal.
