Roasted Red Pepper Hummus Wraps

Delicious and healthy Roasted Red Pepper Hummus Wraps packed with fresh veggies and creamy hummus, perfect for a quick lunch or light dinner.

Ingredients

  • 4 large whole wheat tortillas
  • 1 cup roasted red pepper hummus
  • 1 cup mixed salad greens
  • 1/2 cup shredded carrots
  • 1/2 cucumber, thinly sliced
  • 1/4 red onion, thinly sliced
  • 1/2 avocado, sliced
  • 1/4 cup crumbled feta cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Lay the tortillas flat on a clean surface.
  2. Spread about 1/4 cup of roasted red pepper hummus evenly over each tortilla.
  3. Layer the mixed salad greens, shredded carrots, cucumber slices, red onion, and avocado on top of the hummus.
  4. Sprinkle crumbled feta cheese over the veggies if using.
  5. Season with a pinch of salt and pepper.
  6. Carefully roll up each tortilla tightly to form a wrap.
  7. Slice each wrap in half diagonally and serve immediately or wrap in foil to enjoy later.

Notes

For a spicy kick, add a few slices of jalapeño or a drizzle of hot sauce inside the wrap before rolling.
