A crunchy and flavorful roasted chickpea and corn mix, perfect as a healthy snack or a zesty side dish packed with protein and fiber.

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup frozen corn kernels, thawed
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 tablespoon fresh lime juice
  • 2 tablespoons chopped fresh cilantro (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat the chickpeas dry with a clean towel to remove excess moisture.
  3. In a bowl, toss the chickpeas and corn kernels with olive oil, smoked paprika, cumin, garlic powder, salt, and pepper until well coated.
  4. Spread the mixture evenly on the prepared baking sheet.
  5. Roast in the oven for 25–30 minutes, stirring halfway through, until the chickpeas are crispy and the corn is lightly charred.
  6. Remove from the oven and drizzle with fresh lime juice.
  7. Garnish with chopped cilantro if desired and serve warm or at room temperature.

Notes

For extra heat, sprinkle with a pinch of cayenne pepper before roasting or serve with a squeeze of fresh lime for added zest.
