Roasted Beet Goat Cheese

A vibrant and creamy salad featuring naturally sweet roasted beets paired with tangy goat cheese, perfect as a light appetizer or side dish.

  • 4 medium beets, washed and trimmed
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme leaves
  • Salt and freshly ground black pepper, to taste
  • 4 ounces goat cheese, softened
  • 2 tablespoons balsamic vinegar
  • Mixed salad greens (optional)
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wrap each beet in aluminum foil and place on a baking sheet.
  3. Roast in the oven for 45-60 minutes or until tender when pierced with a fork.
  4. Remove from oven and let cool, then peel the skins off the beets using your hands or a paper towel.
  5. Slice the beets into wedges or rounds.
  6. In a bowl, toss the beet slices with olive oil, thyme, salt, and pepper.
  7. Arrange the beets on a serving platter or over mixed greens.
  8. Crumble goat cheese over the beets.
  9. Drizzle with balsamic vinegar and garnish with chopped parsley if desired.
  10. Serve immediately or chilled.

Notes

For added texture, sprinkle toasted walnuts or pecans on top before serving.
