This Pumpkin Spice French Toast Casserole is a cozy, delicious breakfast perfect for fall mornings, featuring warm spices and creamy pumpkin baked to golden perfection.

  • 1 loaf of brioche or challah bread, cut into 1-inch cubes
  • 1 ½ cups pumpkin puree
  • 2 cups whole milk
  • 4 large eggs
  • ¾ cup granulated sugar
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ¼ cup brown sugar
  • ½ cup chopped pecans (optional)
  • Butter or non-stick spray, for greasing

Instructions

  1. Grease a 9×13 inch baking dish with butter or non-stick spray.
  2. Place the cubed bread evenly into the prepared dish.
  3. In a large bowl, whisk together pumpkin puree, milk, eggs, granulated sugar, pumpkin pie spice, vanilla extract, and salt until smooth.
  4. Pour the pumpkin mixture evenly over the bread cubes, pressing down gently to soak the bread.
  5. Cover the dish with plastic wrap and refrigerate for at least 2 hours or overnight for best results.
  6. Before baking, sprinkle the top evenly with brown sugar and chopped pecans if using.
  7. Preheat the oven to 350°F (175°C). Bake the casserole uncovered for 45-50 minutes, or until the top is golden brown and the custard is set.
  8. Remove from the oven and let cool slightly before serving. Optionally drizzle with maple syrup or dust with powdered sugar.
