Pesto chicken is a flavorful and easy-to-make dish featuring tender chicken breasts coated in fresh basil pesto and baked to perfection. This Italian-inspired meal is perfect for a quick dinner that’s both healthy and delicious.

  • 4 boneless, skinless chicken breasts
  • 1/2 cup basil pesto
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper on both sides.
  3. Heat olive oil in a skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes per side until golden brown.
  4. Transfer the chicken to a baking dish and spread basil pesto evenly over each breast.
  5. Sprinkle grated Parmesan cheese on top of the pesto-coated chicken.
  6. Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  7. Remove from oven and let rest for a few minutes before serving.
