These Peanut Butter Banana Oat Bars are a wholesome, naturally sweet snack perfect for breakfast or an energy boost anytime. Packed with oats, ripe bananas, and creamy peanut butter, they offer a deliciously satisfying treat.

  • 2 ripe bananas, mashed
  • 1 cup creamy peanut butter
  • 2 cups rolled oats
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup dark chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, mix the mashed bananas, peanut butter, honey (or maple syrup), and vanilla extract until smooth.
  3. Add the rolled oats, cinnamon, and salt to the wet ingredients. Stir until fully combined.
  4. Fold in the dark chocolate chips if using.
  5. Press the mixture evenly into the prepared baking pan.
  6. Bake for 20-25 minutes or until the edges are golden and the bars are set.
  7. Remove from oven and allow to cool completely before cutting into bars.

Notes

For a crunchier texture, chill the bars in the fridge for an hour before cutting. You can also add chopped nuts or dried fruit to customize your bars.
