  • 8 oz tempeh, cut into thin strips
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 medium carrot, julienned
  • 1/4 cup orange juice, freshly squeezed
  • 2 tbsp soy sauce
  • 1 tbsp maple syrup
  • 1 tsp rice vinegar
  • 1 tsp cornstarch mixed with 2 tbsp water
  • 2 green onions, chopped
  • 1 tbsp toasted sesame seeds

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add tempeh strips and cook until golden brown on all sides, about 5-7 minutes. Remove tempeh and set aside.
  2. In the same skillet, add garlic and ginger; sauté for 1 minute until fragrant.
  3. Add bell pepper, broccoli, and carrot. Stir fry for 4-5 minutes until vegetables are just tender but still crisp.
  4. In a small bowl, whisk together orange juice, soy sauce, maple syrup, and rice vinegar.
  5. Pour the orange sauce into the skillet with vegetables. Bring to a simmer.
  6. Add the cornstarch slurry and stir continuously until the sauce thickens, about 1-2 minutes.
  7. Return the cooked tempeh to the skillet and toss to coat evenly in the glaze.
  8. Remove from heat. Garnish with chopped green onions and toasted sesame seeds. Serve immediately over steamed rice or noodles if desired.

Notes

For extra flavor, marinate the tempeh in the orange sauce for 20 minutes before cooking. This dish pairs well with brown rice or quinoa for a wholesome meal.
