One-Pot Veggie Cream Orzo

Creamy and comforting, this one-pot veggie cream orzo combines tender orzo pasta with fresh vegetables and a luscious creamy sauce, perfect for a quick and nutritious dinner.

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup zucchini, diced
  • 1 cup spinach leaves
  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until fragrant and translucent.
  2. Add cherry tomatoes and zucchini, cook for 3-4 minutes until slightly softened.
  3. Pour in vegetable broth and bring to a boil.
  4. Add orzo pasta, reduce heat to a simmer, cover and cook for 8-10 minutes, stirring occasionally, until orzo is tender.
  5. Stir in spinach leaves, heavy cream, and Parmesan cheese, cooking for an additional 2 minutes until the spinach wilts and sauce thickens.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh basil.

Notes

For a vegan version, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
