Delight in fudgy brownies layered with crushed mint Oreos for a refreshing twist on a classic dessert. These Mint Oreo Brownies combine rich chocolate and cool mint in every bite.

Ingredients

  • 1 cup unsalted butter
  • 2 1/4 cups granulated sugar
  • 4 large eggs
  • 1 1/4 cups cocoa powder
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 tablespoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 15 Mint Oreo cookies, roughly chopped
  • 1/2 cup semi-sweet chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan or line with parchment paper.
  2. Melt butter in a saucepan over medium heat. Remove from heat and stir in sugar.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in cocoa powder, salt, baking powder, and vanilla extract until combined.
  5. Gently fold in the flour until the batter is just combined.
  6. Fold in chopped Mint Oreo cookies and chocolate chips, reserving a few for topping.
  7. Pour batter into prepared pan and spread evenly. Sprinkle reserved Oreos on top.
  8. Bake for 30-35 minutes or until a toothpick inserted in the center comes out with moist crumbs.
  9. Allow brownies to cool completely before slicing and serving.

Notes

For an extra minty kick, drizzle with melted mint chocolate or serve with a scoop of vanilla ice cream.
