Marry Me Tuscan Chicken is a creamy, flavorful skillet dish featuring tender chicken breasts in a rich sauce with sun-dried tomatoes and spinach, perfect for an impressive yet easy dinner.

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh baby spinach
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook until golden and cooked through, about 5-7 minutes per side. Remove from skillet and set aside.
  3. In the same skillet, add minced garlic and cook for 1 minute until fragrant.
  4. Add chopped sun-dried tomatoes and sauté for 2 minutes.
  5. Pour in heavy cream and chicken broth; stir to combine.
  6. Mix in grated Parmesan cheese, Italian seasoning, and red pepper flakes. Let the sauce simmer for 3-5 minutes until slightly thickened.
  7. Add fresh spinach and cook until wilted.
  8. Return chicken breasts to the skillet and spoon sauce over each piece. Simmer for another 2 minutes to warm through.
  9. Serve hot with your choice of side, spooning extra sauce over the chicken.

Notes

For extra flavor, serve with garlic mashed potatoes or over cooked pasta to soak up the delicious sauce.
