  • 4 large flour tortillas
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 cup spicy verde sauce
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup sour cream
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 jalapeño, seeded and chopped (optional for extra heat)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add diced onions and garlic, cooking until translucent.
  2. Add ground beef to the skillet, season with salt and pepper, and cook until browned. Drain excess fat.
  3. Stir in black beans, cooked rice, and chopped jalapeño if using. Cook for 3-4 minutes until heated through.
  4. Warm the flour tortillas in a dry pan or microwave to make them pliable.
  5. Divide the beef mixture evenly among the tortillas, then sprinkle shredded cheddar cheese on top.
  6. Roll each tortilla tightly into a burrito and place them seam-side down in a baking dish.
  7. Pour the spicy verde sauce generously over the burritos, covering them completely.
  8. Bake in a preheated oven at 375°F (190°C) for 15 minutes until the sauce is bubbly and burritos are heated through.
  9. Remove from oven, garnish with fresh cilantro, and serve with a dollop of sour cream.

Notes

For extra richness, try adding sliced avocado or a sprinkle of crumbled queso fresco on top before serving.
