Loaded Potato Soup

A comforting and creamy loaded potato soup packed with tender potatoes, crispy bacon, sharp cheddar cheese, and fresh green onions for a hearty meal.

Ingredients

  • 4 cups peeled and diced potatoes
  • 4 slices bacon, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup shredded sharp cheddar cheese
  • 1 cup milk
  • 1/2 cup sour cream
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)

Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crisp. Remove bacon and set aside, leaving the bacon fat in the pot.
  2. Add diced onion to the pot and sauté until translucent, about 3-4 minutes.
  3. Add minced garlic and cook for another 30 seconds until fragrant.
  4. Sprinkle flour over the onions and garlic, stirring constantly to form a roux and cook out the raw flour taste, about 2 minutes.
  5. Slowly whisk in chicken broth, ensuring no lumps form.
  6. Add diced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
  7. Using a potato masher or immersion blender, mash some of the potatoes in the pot to thicken the soup, leaving some chunks for texture.
  8. Stir in milk, shredded cheddar cheese, and sour cream until cheese is melted and soup is creamy.
  9. Season with salt and pepper to taste.
  10. Serve hot, garnished with crispy bacon pieces and sliced green onions.

Notes

For extra creaminess, substitute half the milk with heavy cream. Add a pinch of smoked paprika for a subtle smoky flavor.
