Loaded Baked Potato Soup in a Rustic Bowl

This creamy Loaded Baked Potato Soup tastes just like a loaded baked potato in a bowl! Packed with cheesy goodness, bacon, and all your favorite toppings, it’s the ultimate comfort food.

  • 6 medium russet potatoes, scrubbed
  • 4 tablespoons olive oil, divided
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper, divided
  • 6 slices bacon, cooked and crumbled
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese, plus more for topping
  • 1/4 cup sour cream, plus more for topping
  • 2 tablespoons chopped fresh chives, for topping

Instructions

  1. Preheat oven to 400°F (200°C). Pierce potatoes several times with a fork.
  2. Rub potatoes with 2 tablespoons olive oil and sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper. Bake for 60-75 minutes, or until easily pierced with a fork.
  3. While potatoes are baking, cook bacon until crispy. Crumble and set aside.
  4. In a large pot or Dutch oven, heat remaining 2 tablespoons olive oil over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  5. Once potatoes are cool enough to handle, cut them in half and scoop out the flesh into the pot with the onion and garlic, discarding the skins (or save for potato skins!).
  6. Add chicken broth to the pot and bring to a simmer. Use an immersion blender to blend the soup until smooth. If you don’t have an immersion blender, you can carefully transfer the soup to a regular blender in batches.
  7. Stir in heavy cream and cheddar cheese until cheese is melted and the soup is heated through. Season with remaining 1/2 teaspoon salt and 1/4 teaspoon pepper, or to taste.
  8. Ladle soup into bowls and top with crumbled bacon, shredded cheddar cheese, sour cream, and chopped chives. Serve immediately.

Notes

For an extra smoky flavor, use smoked paprika in the soup. You can also add a dollop of cream cheese for extra creaminess.
