lentil hotpot

A hearty and comforting lentil hotpot packed with rich flavors and wholesome ingredients, perfect for a nutritious family meal.

  • 1 cup dried green or brown lentils, rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup mushrooms, sliced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 bay leaf
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large ovenproof pot or Dutch oven, heat olive oil over medium heat.
  3. Add onion, garlic, carrots, celery, and mushrooms; sauté for 5-7 minutes until softened.
  4. Stir in tomato paste, thyme, smoked paprika, salt, and pepper.
  5. Add lentils, diced tomatoes, vegetable broth, and bay leaf. Bring to a boil.
  6. Cover and transfer pot to the oven; bake for 45-50 minutes until lentils are tender.
  7. Remove bay leaf and adjust seasoning if needed.
  8. Garnish with fresh parsley and serve hot.

Notes

For a richer flavor, add a splash of red wine before baking or top with mashed potatoes for a classic hotpot twist.
