Juicy Pineapple Cake

A moist and flavorful pineapple cake bursting with natural sweetness and juicy pineapple pieces, perfect for dessert or celebrations.

  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple with juice
  • 1/2 cup sour cream
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • Optional: 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, whisk together the flour, sugar, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, beat the eggs, then add applesauce, vegetable oil, vanilla extract, and sour cream. Mix until combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined.
  5. Fold in the crushed pineapple (with juice) and nuts if using.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.

Notes

For extra moisture, top the cooled cake with a cream cheese frosting or a light dusting of powdered sugar.
