Jam donut focaccia is a delightful fusion of fluffy Italian focaccia bread infused with sweet jam pockets, offering a unique treat that blends bread and pastry.

Ingredients

  • 3 ½ cups all-purpose flour
  • 1 packet (2 ¼ tsp) active dry yeast
  • 1 cup warm water (110°F/45°C)
  • 2 tbsp sugar
  • 1 tsp salt
  • ⅓ cup olive oil, plus extra for drizzling
  • ½ cup fruit jam (strawberry or raspberry recommended)
  • Powdered sugar, for dusting (optional)

Instructions

  1. In a small bowl, dissolve sugar in warm water and sprinkle yeast over. Let it sit for 5-10 minutes until foamy.
  2. In a large bowl, combine flour and salt. Add the yeast mixture and olive oil. Mix until a sticky dough forms.
  3. Knead the dough on a floured surface for about 8 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.
  5. Preheat oven to 375°F (190°C). Lightly oil a baking sheet or focaccia pan.
  6. Punch down the dough and roll it out into a rectangle about ½ inch thick. Transfer to the prepared pan.
  7. Using your fingers, create shallow dimples evenly across the dough surface.
  8. Spoon small dollops of jam into some of the dimples, gently pressing them in so they are nestled but not overflowing.
  9. Drizzle a little olive oil over the top and sprinkle lightly with salt.
  10. Bake for 20-25 minutes until golden brown and cooked through.
  11. Remove from oven and cool slightly, then dust with powdered sugar if desired. Slice and serve warm or at room temperature.

Notes

For extra indulgence, serve warm with a dollop of whipped cream or a scoop of vanilla ice cream.
