Italian Love Cake is a luscious, almond and ricotta-based dessert that combines moist textures with rich flavors, perfect for any special occasion.

  • 1 cup almond flour
  • 1 1/2 cups ricotta cheese
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • Powdered sugar for dusting
  • Almond slivers for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In a large bowl, beat the ricotta cheese and sugar together until smooth and creamy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Mix in the vanilla extract and lemon zest.
  5. In a separate bowl, whisk together the almond flour, all-purpose flour, and baking powder.
  6. Gradually fold the dry ingredients into the wet mixture until just combined.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 40–45 minutes or until the cake is golden and a toothpick inserted in the center comes out clean.
  9. Allow the cake to cool completely in the pan before removing.
  10. Dust with powdered sugar and garnish with almond slivers before serving.
