Indian Beef Curry in Slow Cooker

A rich and flavorful Indian Beef Curry simmered to perfection in a slow cooker, tenderizing the beef with aromatic spices and a creamy sauce for a comforting meal.

  • 2 lbs beef chuck, cut into cubes
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1 inch piece of ginger, grated
  • 2 tbsp curry powder
  • 1 tsp turmeric powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp chili powder (adjust to taste)
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 1/2 cup plain yogurt
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat oil in a skillet over medium heat. Add onions and sauté until golden brown.
  2. Add garlic and ginger; cook for 1-2 minutes until fragrant.
  3. Stir in curry powder, turmeric, cumin, coriander, and chili powder; cook for another minute.
  4. Transfer the spice mixture to the slow cooker. Add beef cubes, diced tomatoes, beef broth, and salt; stir to combine.
  5. Cover and cook on low for 7-8 hours or on high for 4-5 hours until beef is tender.
  6. About 30 minutes before serving, stir in the yogurt and adjust seasoning if needed.
  7. Garnish with fresh cilantro before serving.

Notes

Serve this curry with steamed basmati rice or warm naan bread for a complete meal. For extra creaminess, add a splash of coconut milk along with the yogurt.
