These Honey Sriracha Chicken Rice Bowls combine tender, spicy-sweet chicken with fluffy rice and fresh veggies for a flavorful and easy weeknight meal.

  • 1 lb boneless, skinless chicken thighs
  • 1/4 cup honey
  • 2 tbsp sriracha sauce
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 2 cups cooked jasmine rice
  • 1 cup shredded carrots
  • 1 cup chopped cucumber
  • 1/4 cup chopped green onions
  • 1 tbsp sesame seeds
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together honey, sriracha, soy sauce, rice vinegar, and minced garlic to create the sauce.
  2. Season the chicken thighs with salt and pepper, then coat them in the sauce mixture.
  3. Heat olive oil in a skillet over medium-high heat and cook chicken for 5-6 minutes per side until fully cooked and caramelized.
  4. Remove chicken from skillet and let rest for a few minutes, then slice into strips.
  5. Assemble bowls by dividing jasmine rice among bowls, topping with sliced chicken, shredded carrots, chopped cucumber, and green onions.
  6. Drizzle any remaining sauce from the pan over the bowls and sprinkle with sesame seeds before serving.

Notes

For extra crunch, add sliced radishes or toasted cashews on top. You can also swap jasmine rice for brown rice or cauliflower rice for a healthier twist.
