Honey Glazed Carrots Green Beans

A vibrant and healthy side dish featuring tender green beans and sweet honey-glazed carrots, perfect for complementing any meal.

  • 2 cups fresh green beans, trimmed
  • 2 cups carrots, peeled and sliced
  • 2 tablespoons honey
  • 2 tablespoons unsalted butter
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon fresh lemon juice (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the green beans and carrots, blanching for 3-4 minutes until tender-crisp. Drain and set aside.
  2. In a large skillet, heat olive oil and butter over medium heat until melted and foam subsides.
  3. Add the drained vegetables to the skillet, tossing to coat evenly in butter and oil.
  4. Drizzle honey over the vegetables, stirring gently to glaze them. Cook for 2-3 minutes until vegetables are tender and honey is slightly caramelized.
  5. Season with salt, black pepper, and lemon juice if using. Toss once more and remove from heat.
  6. Serve warm as a flavorful side dish.

Notes

For an extra touch, sprinkle toasted almonds or fresh parsley on top before serving.
