This Grilled Mango Pineapple Chicken is a vibrant and tropical dish combining juicy grilled chicken with sweet mango and pineapple for a perfectly balanced flavor.

  • 4 boneless, skinless chicken breasts
  • 1 ripe mango, peeled and sliced
  • 1 cup fresh pineapple chunks
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a bowl, whisk together olive oil, lime juice, honey, minced garlic, cumin, chili powder, salt, and pepper to create the marinade.
  2. Place the chicken breasts in a zip-top bag or shallow dish and pour half of the marinade over. Marinate for at least 30 minutes in the refrigerator.
  3. Preheat the grill to medium-high heat and lightly oil the grates.
  4. Thread mango slices and pineapple chunks onto skewers (if using wooden skewers, soak them in water for 30 minutes).
  5. Grill the chicken breasts for 6-7 minutes per side, or until fully cooked and juices run clear.
  6. Grill the mango and pineapple skewers for 2-3 minutes per side until caramelized.
  7. Remove chicken and fruit from the grill. Let the chicken rest for 5 minutes before slicing.
  8. Serve the grilled chicken topped with the grilled mango and pineapple, garnished with fresh cilantro.

Notes

For extra flavor, serve with a side of cilantro-lime rice or a fresh green salad. You can also add a sprinkle of chili flakes for heat.
