German Potato Soup

Hearty German Potato Soup

This hearty German Potato Soup is a creamy and comforting dish, perfect for a chilly day. It’s packed with tender potatoes, smoky bacon, and flavorful broth, making it a satisfying and easy-to-make meal.

  • 4 slices bacon, diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 lbs potatoes, peeled and cubed
  • 1 teaspoon caraway seeds
  • 1/2 teaspoon dried marjoram
  • 1/4 teaspoon black pepper
  • 1 cup milk
  • 1/4 cup chopped fresh parsley, for garnish
  • Salt to taste

Instructions

  1. In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, reserving the bacon grease in the pot.
  2. Add the chopped onion to the pot and cook in the bacon grease until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more.
  3. Pour in the chicken broth, add the cubed potatoes, caraway seeds, marjoram, and black pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
  4. Using an immersion blender, partially blend the soup until it reaches your desired consistency (some chunks are nice!). Alternatively, you can carefully transfer some of the soup to a blender and blend until smooth, then return it to the pot.
  5. Stir in the milk and heat gently until warmed through. Do not boil. Season with salt to taste.
  6. Serve hot, garnished with the cooked bacon and fresh parsley.

Notes

For a richer flavor, use heavy cream instead of milk. You can also add a dollop of sour cream or a sprinkle of paprika when serving.
