  • 1 lb large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 cup jasmine rice, cooked
  • 1 cup broccoli florets
  • 1/2 red bell pepper, sliced
  • 1/2 cup shredded carrots
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Cook the jasmine rice according to package instructions and set aside.
  2. In a large skillet, heat olive oil and butter over medium heat until melted.
  3. Add minced garlic and sauté for about 1 minute until fragrant.
  4. Add shrimp to the skillet, season with salt and pepper, and cook for 2–3 minutes on each side until pink and cooked through.
  5. Remove shrimp from skillet and set aside. In the same skillet, add broccoli and red bell pepper; sauté for 4–5 minutes until crisp-tender.
  6. Add shredded carrots and cook for another 1–2 minutes.
  7. Return shrimp to the skillet, drizzle lemon juice over everything, and toss to combine and heat through.
  8. Serve the garlic shrimp and vegetables over the cooked jasmine rice.
  9. Garnish with chopped fresh parsley and enjoy.

Notes

For extra flavor, add a pinch of red pepper flakes to the garlic while sautéing, or serve with a side of avocado slices for creaminess.
