This Garlic Butter Chicken Thigh Skillet is a simple yet flavorful dish featuring tender chicken thighs cooked in a rich garlic butter sauce, perfect for a comforting weeknight dinner.

  • 4 bone-in, skin-on chicken thighs
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter, divided
  • 5 garlic cloves, minced
  • 1 teaspoon fresh thyme leaves
  • 1/2 cup chicken broth
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Season the chicken thighs generously with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken thighs skin-side down and cook until skin is golden brown and crispy, about 7-8 minutes.
  3. Flip the chicken and cook the other side for another 5 minutes. Remove chicken from skillet and set aside.
  4. Reduce heat to medium and add 2 tablespoons butter to the skillet. Once melted, add minced garlic and thyme leaves; sauté until fragrant, about 1 minute.
  5. Pour in chicken broth and lemon juice, scraping up any browned bits from the bottom of the skillet.
  6. Return chicken thighs to the skillet, skin-side up. Spoon some sauce over the chicken, cover, and simmer for 10-12 minutes until chicken is cooked through.
  7. Remove chicken, stir in remaining 2 tablespoons butter into the sauce until melted and smooth.
  8. Pour the sauce over the chicken, garnish with chopped parsley, and serve hot.

For extra flavor, serve this dish with a side of garlic mashed potatoes or steamed vegetables.
