French Onion Soup

Classic French Onion Soup features rich caramelized onions simmered in savory beef broth, topped with toasted baguette slices and melted cheese for a comforting and flavorful meal.

  • 6 large yellow onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 4 cups beef broth
  • 2 cups chicken broth
  • 1/2 cup dry white wine (optional)
  • 1 bay leaf
  • 2 teaspoons fresh thyme or 1 teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste
  • 1 baguette, sliced into 1/2-inch pieces
  • 2 cups shredded Gruyère cheese

Instructions

  1. In a large pot, melt butter with olive oil over medium heat. Add sliced onions and salt.
  2. Cook onions, stirring frequently, for about 25-30 minutes until caramelized and golden brown. Add sugar halfway through to help caramelize.
  3. Pour in white wine (if using) to deglaze the pot, scraping up browned bits from the bottom. Let it reduce for 2 minutes.
  4. Add beef broth, chicken broth, bay leaf, and thyme.
  5. Bring soup to a boil, then reduce heat and simmer uncovered for 20-30 minutes. Season with salt and pepper to taste.
  6. Preheat oven broiler. Arrange baguette slices on a baking sheet and toast until golden, about 1-2 minutes per side.
  7. Ladle soup into oven-safe bowls, place toasted baguette slices on top, then sprinkle with shredded Gruyère cheese.
  8. Place bowls under broiler until cheese is melted and bubbly, about 2-4 minutes.
  9. Carefully remove from oven and serve hot.

Notes

For a vegetarian version, substitute vegetable broth for the beef and chicken broth. Serve with a crisp green salad for a complete meal.
