  • 4 boneless, skinless chicken breasts
  • 2 large yellow onions, thinly sliced
  • 3 tablespoons butter
  • 1 cup beef broth
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste
  • 1 1/2 cups shredded Gruyère cheese
  • 2 tablespoons all-purpose flour
  • 1 tablespoon olive oil
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat butter and olive oil over medium heat. Add sliced onions and cook slowly, stirring occasionally, until deeply caramelized, about 25-30 minutes.
  3. Sprinkle flour over onions, stir for 1 minute to cook out flour taste.
  4. Add beef broth, garlic powder, and thyme to the onions, stirring to combine. Simmer for 5 minutes until slightly thickened.
  5. Season chicken breasts with salt and pepper on both sides.
  6. Place chicken breasts in a baking dish and pour the onion and broth mixture evenly over the chicken.
  7. Sprinkle shredded Gruyère cheese evenly over the top.
  8. Bake in preheated oven for 25-30 minutes, or until chicken is cooked through and cheese is bubbly and golden.
  9. Garnish with chopped parsley if desired and serve hot.
