Filipino Chicken Adobo

Filipino Chicken Adobo is a savory and tangy stew made with marinated chicken simmered in vinegar, soy sauce, garlic, and aromatic spices, delivering a classic taste of the Philippines.

Ingredients

  • 2 lbs chicken thighs, bone-in and skin-on
  • 1/2 cup soy sauce
  • 1/2 cup white vinegar
  • 6 cloves garlic, crushed
  • 2 bay leaves
  • 1 teaspoon whole black peppercorns
  • 1 tablespoon brown sugar
  • 1/2 cup water
  • 2 tablespoons cooking oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine soy sauce, vinegar, crushed garlic, bay leaves, peppercorns, and brown sugar. Add chicken pieces and marinate for at least 1 hour, preferably overnight.
  2. Heat cooking oil in a large skillet or pot over medium heat. Sear the marinated chicken pieces until browned on all sides, about 3-4 minutes per side.
  3. Pour in the marinade and water. Bring to a boil, then reduce heat to low and simmer covered for 30-40 minutes until chicken is cooked through and tender.
  4. Remove the lid and continue simmering for another 10-15 minutes to reduce the sauce to your desired consistency.
  5. Adjust salt and pepper to taste. Remove bay leaves before serving.
  6. Serve hot with steamed white rice.

Notes

For a richer flavor, try adding a splash of coconut milk at the end of cooking or serve with a side of pickled vegetables.
