  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup dried mixed fruit (raisins, cranberries, chopped dates)
  • 1/4 cup chopped nuts (walnuts or pecans)
  • 1 teaspoon vanilla extract
  • 100g dark chocolate, chopped
  • 1/4 cup heavy cream
  • Edible gold dust or festive sprinkles (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a mini cake pan or use silicone molds.
  2. In a bowl, cream the unsalted butter and brown sugar together until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition, then stir in vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, and cloves.
  5. Gradually add the dry ingredients to the butter mixture alternately with milk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Fold in the dried mixed fruit and chopped nuts evenly into the batter.
  7. Divide the batter evenly among the mini cake molds, filling them about 3/4 full.
  8. Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow cakes to cool completely on a wire rack before removing from molds.
  10. To make the ganache, gently heat the heavy cream until just simmering and pour over the chopped dark chocolate. Let sit for a minute, then stir until smooth and glossy.
  11. Pour or spoon the ganache over each cooled mini cake and spread evenly.
  12. Decorate with edible gold dust or festive sprinkles if desired. Let ganache set before serving.

Notes

For an extra festive touch, serve these mini cakes with a dollop of whipped cream or a sprinkle of crushed candy canes.
