Peanut Noodles are a flavorful and creamy Asian-inspired dish combining tender noodles with a rich, savory peanut sauce perfect for a quick and satisfying meal.

  • 8 oz noodles (rice noodles or spaghetti)
  • 1/3 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1/4 cup warm water
  • 1/2 cup shredded carrots
  • 1/4 cup chopped green onions
  • 1 tbsp chopped cilantro (optional)
  • 1 tbsp crushed peanuts (optional)
  • Red pepper flakes or sriracha to taste (optional)

Instructions

  1. Cook the noodles according to package instructions until al dente. Drain and set aside.
  2. In a bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, minced garlic, grated ginger, and warm water until smooth and creamy.
  3. Pour the peanut sauce over the warm noodles and toss well to coat evenly.
  4. Add shredded carrots and chopped green onions, mixing gently to combine.
  5. Garnish with chopped cilantro, crushed peanuts, and red pepper flakes or sriracha if desired.
  6. Serve immediately or chilled for a refreshing cold peanut noodle dish.

Notes

For extra protein, add grilled chicken or tofu. You can also customize the spice level by adjusting the amount of red pepper flakes or sriracha.
