Chicken Kebabs

Juicy and flavorful chicken kebabs marinated with herbs and spices, perfect for a quick grilled meal that bursts with Mediterranean flavors.

  • 1 lb chicken breast, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp ground coriander
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lemon, juiced
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 small red onion, quartered
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, combine olive oil, garlic, cumin, paprika, coriander, salt, pepper, and lemon juice to make the marinade.
  2. Add chicken cubes to the marinade, toss to coat well, and refrigerate for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Thread chicken, bell peppers, and onion alternately onto the soaked skewers.
  5. Place skewers on the grill and cook for 10-12 minutes, turning occasionally, until chicken is cooked through and slightly charred.
  6. Remove from grill and let rest for a few minutes before serving.

Notes

For extra flavor, serve with a side of tzatziki sauce or a fresh cucumber salad.
