Cucumber Feta Salad

A refreshing and crisp salad featuring cool cucumbers and tangy feta cheese, perfect for a light meal or side dish.

Ingredients

  • 2 large cucumbers, thinly sliced
  • 1 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons fresh dill, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the sliced cucumbers, crumbled feta, and red onion.
  2. In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper.
  3. Pour the dressing over the cucumber mixture and toss gently until evenly coated.
  4. Sprinkle chopped fresh dill on top and give the salad a final gentle toss.
  5. Chill the salad in the refrigerator for 15 minutes before serving for best flavor.

Notes

For added texture and flavor, try adding halved cherry tomatoes or a handful of kalamata olives.
