Comforting Crockpot Potato Soup

  • 5 lbs Russet potatoes, peeled and cubed
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • 6 slices bacon, cooked and crumbled
  • 1/4 cup chopped green onions, for garnish
  • 1 cup shredded cheddar cheese, for garnish

Instructions

  1. Place potatoes, onion, garlic, chicken broth, thyme, salt, and pepper in a crockpot.
  2. Cook on low for 6-8 hours or on high for 3-4 hours, or until potatoes are very tender.
  3. Using an immersion blender, blend the soup until smooth. Alternatively, carefully transfer the soup to a regular blender in batches and blend until smooth. Return to the crockpot.
  4. Stir in heavy cream and sour cream. Heat through.
  5. Ladle into bowls and garnish with crumbled bacon, green onions, and shredded cheddar cheese.

Notes

For a thicker soup, mash some of the potatoes before blending. You can also substitute vegetable broth for chicken broth for a vegetarian option.
